How to restart your kitchen equipment correctly

Note: It is your responsibility to ensure you are wearing the appropriate PPE: gloves, eye protection and mask when handling chemicals or cleaning your machine. When working with detergent and chemicals, always make sure you have familiarised yourself with the COSHH safety datasheets beforehand.

If your dishwasher isn’t working properly but you’re not sure why, the first point of troubleshooting is to drain the machine down, turn off, take apart and clean.

  1. To drain: Press and hold the start button to drain the water out of the dishwasher
  2. Turn machine off and isolate the electric supply
  3. Remove lower and upper wash arms and caps, clean thoroughly with warm soapy water. Rinse and put to one side.
  4. Remove internal strainer and cover, clean thoroughly with warm soapy water. Rinse and put to one side.
  5. Give the wash chamber a wipe down and remove any debris.
  6. Replace caps on the wash arms. Replace wash arms and strainer (making sure these are the right way round! Check your manual if you’re not sure)
  7. Check salt levels: remove softener cap, use the funnel provided and pour in salt granules until full. Rinse the cap and replace, making sure it’s on tight.
  8. Check and clean door and door seals using a mild detergent
  9. Give the outside a good clean, and clean the surface of the touch display with a damp cloth
  10. Ensure the machine has adequate detergent levels. If you need to replace detergent, ensure you are wearing the appropriate PPE.
  11. Turn on the electrics and check the machine is operating satisfactorily

Possible Causes

1. Low detergent levels

First thing's first - have you checked the detergent levels? And are you using a detergent and rinse aid suitable for your dishwasher?

2. Blocked detergent hoses

If your dishwasher has been out of use for a considerable amount of time or wasn’t shut down properly, the chemical or detergent hoses may be blocked with crystalised detergent.

Here’s how to flush the hoses through to unblock.

First try to pull detergent through the hoses to dislodge the blockage, this is called 'Priming the detergent lines'. Leave the hoses in the detergent bottles and follow these instructions on the touch screen display.

  1. Chef’s menu

  3. Chemical setting
  4. Filling chemical hoses
    • Yes
  5. Press the green button to start the process

 

If this doesn’t work, try flushing with warm water:

Firsty, ensure you are wearing adequate PPE and feel confident to do so.

Take the hoses out of the detergent bottles and drop into a bucket of hot water (hot tap water will be fine, do not use boiling water). Then repeat the process with the hot water:

  1. Chef’s menu
  2. Pin 1111
  3. Chemical setting
  4. Filling chemical hoses
    • Yes
  5. Press the green button to start the process

 

Have the hoses unblocked?

Yes: Great! Now you’ll need to prime the lines again with detergent: pop the hoses back into the chemicals, follow the above process again and you’re good to go.

No: Still blocked? Try repeating the process again.

Note: These instructions may vary, depending on the model of dishwasher you're working on. If unsure, please refer to your manual. 

If your machine has been out of action for a while - or if you've run out of detergent and continued using your machine - there may be an airlock in detergent hoses and you'll need to prime the detergent lines.

Here’s how to flush the hoses through to unblock an airlock.

Leave the hoses in the detergent bottles and follow these instructions on the touch screen display.

  1. Chef’s menu

  3. Chemical setting
  4. Filling chemical hoses
    • Yes
  5. Press the green button to start the process.

If your dishwasher isn’t draining properly, it is usually due to a blockage. Due to the nature of blockages, it’s best to call out a Service Technician to deal with the issue.

If your kitchen is going to be closed for a day or more, it is crucial to shut the machine down correctly. This includes draining the machine down to ensure there’s no standing water and potential debris left inside which could cause blockages at a later date. If the dishwasher is not shut down correctly, this is a potential environment for harmful bacteria.

It’s important to deep clean any dishwasher to ensure optimised functionality and to kill any harmful bacteria in your machine.

If your dishwasher has been out of action over the lockdown period, it is essential you give it a deep clean before reopening your business.

Most HOBART dishwashers flag up on the display screen when a Hygiene Cycle is needed. For any machines that don’t have this feature, we recommend a monthly deep clean to keep bacteria at bay.

To prepare your dishwasher for the Hygiene Cycle:

  1. First, make sure you are wearing appropriate PPE
  2. Turn machine off and isolate the electrical supply
  3. Remove any trays
  4. Remove lower and upper wash arms and caps, clean thoroughly with warm soapy water. Rinse and put to one side.
  5. Remove internal strainer and cover, clean thoroughly with warm soapy water. Rinse and put to one side.
  6. Check for and remove any debris within the wash chamber, including door and door recess. Give the wash chamber a wipe down – don’t worry too much about giving it a good clean as it will clean itself once put into the Hygiene Cycle.
  7. Check salt levels: remove softener cap, use the funnel provided and pour in salt granules until full. Rinse the cap and replace, making sure it’s on tight.
  8. Check and clean door and door seals using a mild detergent
  9. Once the wash chamber has been thoroughly cleaned, put the wash arms and strainer back and close the door.
  10. Turn the electrical supply back on
  11. Press and hold the start button – the machine will now go through its filling phase
    1. Once ready, the start button will show as green

It’s now important to give the machine a quick rinse through before putting it into a Hygiene Cycle. This will remove any loose salt, missed debris.

  1. Press the green button to run a standard cycle

The very last thing we do is run the Hygiene Cycle. This cycle works best with HOBART’S Hyline Hygiene Tablets.

To start the Hygiene Cycle:

  1. On the display screen, press the clock symbol
  2. Use arrows to scroll down to Hygiene Cycle
  3. Take a Hyline Hygiene Tablet out of the tub and place inside wash chamber
    1. Remember to wear gloves when handling chemicals and we recommend you wash your hands immediately after
  4. Close the door
  5. Press the start button
  6. The Hygiene Cycle will take approximately 15 mins
  7. Once complete, give the outside a good clean - including the display
  8. Double check detergent levels and order more if necessary

After the Hygiene Cycle is complete, drain and refill the dishwasher prior to putting the machine back into service.
